Almond flour, a.k.a. almond meal, consists of (you guessed it!) almonds, finely milled to make a protein- and fiber-rich “flour.” Most often used as an alternative in gluten-free baked goods, it adds a sweet and nutty flavor to breads and desserts that also contain wheat, and serves as a replacement for breadcrumbs in savory dishes such as meatloaf or chicken parmesan. And while it is possible to grind your own almond flour, you won’t likely achieve a super-fine texture using a home cook's tools. For that, seek the fluffy, ready-to-use flours of the following brands.
